Osteria Bianca is a 48-seat room on Lygon Street. Pasta is made every morning on the bench you can see from the dining room, and the slow sauces run on a weekly cycle so nothing is rushed.
Two thirds of the wine list is under fifty dollars. That's a deliberate constraint, not a gap.
Bianca opened in 2015 after eleven years in other people's kitchens, with a plan to cook the food she'd actually eat on a Tuesday. The one-hat review in 2022 didn't change the menu.
We won't claim to be coeliac-safe when we handle flour all day. We won't do substitutions we can't execute properly on a Friday at eight. And staff are on above-award weekend rates.
One pasta shape a day, made that morning. Sauces on a weekly cycle. A short menu that changes when the produce changes, not when marketing says so.
Osteria Bianca collects only what it needs to do the work, keeps it for three years, and anonymises rather than deletes so the record of what happened survives the person leaving.
A complaint reaches the owner the same day. You get an answer within two working days and a named person who owns it until it is closed.

Yes, and we recommend it Thursday to Saturday. We hold about a quarter of the room for walk-ins.
A full one, not a token pasta. Several dishes are vegan — they're marked, and the kitchen doesn't improvise substitutions on a busy night.
